In regards to Wrecking Crew: yes. I always figured that maybe it was hard to find plumbing work, so maybe Mario and Luigi worked on carpentry and a few other trades to pay bills - it explains Donkey Kong (-ish) and if they'd been so keen on plumbing for so long (as the cartoons and other stuff seem to vaguely imply) I would imagine that they'd have a LOT of general trade skills accumulated. The only issue with Donkey Kong is that DK was, according to that game's description, Mario's pet. Which, really, I don't know how to cover in canon - unless that was some kind of joke, like he'd made friends with DK in a zoo or something and called him his 'pet'. Seriously I have no idea.

Spin-offs? Well I'm not sure - I mean, I always thought that things like the sports series were somewhat canon to the universe as being popular competitive sports, but I never really thought they had, nor did they need, specific timeline points - Mario Kart games could have happened in whatever order and at whatever time, as far as I'm concerned. As 8-Bit pointed out, there's no use in trying to decipher that... do Paper Mario games and things like MariovsDK count as spin-off? Because I think they have some definite place in the plot.

I thought Luigi wasn't in Donkey Kong?

Mario probably reunited with Luigi in Wrecking Crew, Luigi was probably working for the Wrecking Crew while Mario was a carpenter, then they both went to plumbing.

Paper Mario and Mario vs. DK should count as a main title, not a spinoff, since they do have matched similarities to the main games.

I always imagined Donkey Kong taking place at night-time, due to the black background and my amazing ability to jump to unjustified conclusions. It can't have taken place over a massive span of time though (4 levels, come on) so Mario and Luigi wouldn't have to necessarily be notably separate or anything - they're allowed to go out without one another, unlikely as that seems.
